Have you ever had one of those crazy busy days when your running here and dropping this off there and you can't forget to take care of that and then you realize that somewhere in all this craziness you have to throw something together for dinner and you don't want cheap takeout and you want something yummy....mmm, after all you're starving after the day you've had and the only thing you had for lunch was that apple you grabbed heading out the door...oh yeah, you know what I talking about...yep.
So here is a quick go-to favorite of mine. Homemade bread that is easy-peasy, you throw all the ingredients in your mixer and the best part is... it only takes 25 minutes to rise...yep, you read it right, 25 minutes and it's good and you can use the dough for pizza, scones, rolls, bread sticks, Navajo tacos and cinnamon rolls.
The bread is great with spaghetti, soup, or even make it a sandwich night on warm yummy bread. I love it!
This recipe make 4 loaves. I cut the recipe in half.
Homemade Bread Recipe
10 1/2 cups white bread flour or wheat flour (do not use all-purpose flour) I bought a bag at Costco
1/2 cup sugar
1 Tablespoon salt
3 rounded Tablespoons SAF instant yeast-I bought at Walmart
3 Tablesppons of liquid lecithin (squeeze or pour directly into bowl-approximate amount because the lecithin is too sticky to touch)
4 1/2 + cups hot water
Mix dry ingredients together. Add lecithin and hot water and mix for 1 minute. Dough should resemble cookie dough and be very sticky. If dough is too dry, add more water. Mix 5 minutes more. (Do not add flour to dough after it has mixed. Spray your counter and bread pans with PAM cooking spray. Quarter dough and shape into loaves. Place in bread pans and cover with dish cloths. Let rise 25 minutes then bake at 350 degrees for 25 minutes.
For whole wheat bread, add one cup of applesauce as part of 4 1/2 cups of hot water and 1 additional Tablespoon of lecithin. Mix for ten minutes.
You can mix whole wheat and white bread flour too!
